The artwork is chosen after the maths is finished, by different people, for reasons unconnected to how the game plays. Knowing what it is for makes a catalogue far easier to read.

A branded theme is selling recognition of the property and costs a royalty that comes out of the return. That is the one case where the theme has a measurable effect on the maths, and it is a negative one.
Where themes do matter
To enjoyment, which is not nothing. A game whose setting bores you will be a worse evening regardless of its numbers, and there is no reason to play something visually unappealing when the catalogue contains thousands of alternatives.
